Lemon Margarine Chicken

Servings: 4
Cooking and Prep:  30 minutes

Ingredients

4 Chicken breasts
1/3 cup all-purpose flour
Margarine
Salt and pepper
1 Tbsp olive oil
Garlic (if you love it, feel free to add more!)
1/2 cup low-sodium chicken broth
3 Tbsp fresh lemon juice
1/2 tsp fresh lemon zest
1 1/2 Tbsp minced fresh parsley (which is optional)

Directions

First pound the chicken breast until you get a relatively thin chicken cutlet. (You can buy lean chicken)
Then season both sides of the chicken with salt and pepper and mash each side in flour
Heat the pan and melt the olive oil and margarine in the pan. Add the chicken breast and fry on both sides until golden
Transfer the chicken to another plate and fry the garlic in a pan
Pour the chicken broth into the pan, then add the lemon juice
Reduce heat slightly and let simmer until it’s reduced by half
Melt the margarine in another frying pan and mix with the lemon zest
Then, put the chicken in the pan and add the sauce you prepared
Put the chicken in the desired dish and sprinkle parsley on it
