Ingredients
400g breast turkey mince
2 tsp. vegetable oil
250g pack brown mushroom, finely chopped
Pinch of sugar
1 tbsp. tomato purée

2 x 400 g cans chopped tomato with garlic & herbs
400 ml chicken stock
cooked wholemeal pasta and fresh basil leaves
1 large chopped onion
1 large chopped carrot
3 chopped celery sticks

Directions
Heat a large frying pan, put the turkey in it, and fry until brown and set aside.
Add the oil to the pan and cook the carrot, onion, and celery
Add the mushrooms and cook for a few minutes
Add the sugar and tomato purée, and cook for one minute more, stirring to stop it from sticking
Add the turkey and tomatoes to the previous ingredients
Cook for at least 20 minutes to thicken
Serve with pasta and basil
